Who but you could make a gem out of an eggplant. Well, call it an aubergine and already its status has risen. Cover it with cheese and it’s ambrosia. What a beautiful range of purples and greens you managed. Can’t wait to see what you create when you start to experiment.

Thanks so much, Sharon! 😃💕 hehe… yeah, eggplant is an interesting thing indeed… I honestly had no idea how to capture the color so I just splashed a few around and hoped for the best!

Remember recently when I told you about the fabulous Eggplant Parmesan that I made using Maris’ awesome (and healthier!) recipe . It was so good that I bought more eggplant at the farmers market. I also picked up some green tomatoes to try out an idea I have for a healthier fried green tomato recipe .

Unfortunately, it was an unbelievably busy week (I was working on a big project, which went live today) and before I knew it, my lovely green heirlooms were ripening. Yea, whoops. So I had to get creative. Using the method from my Slow-Roasted Plum Tomatoes , I drew out the sweetness in the tomatoes in the oven. Then I used the method for roasting the eggplant from Maris’ recipe to roast lovely eggplant.

Roasted veggies … yum. I could have easily tossed them with pasta and a spritz of lemon and called it a day. And that would have been absolutely delish. But no, I wanted bigger, better … I wanted pie.

The incredibly versatile eggplant works in everything from Italian to Asian recipes. Bonus: It makes a tasty substitute for meat, too.

Add a sliced chili to this vegetarian stir-fry for a boost of heat.

Get the Recipe: Eggplant and Tofu Stir-Fry

Give eggplant parmesan a twist—literally—by rolling the ricotta mixture inside each pre-baked eggplant slice before topping with marinara sauce and freshly grated mozzarella. It has all the cheesy, sauce-y goodness you’d expect from lasagna, but without the heaviness of pasta noodles. Bake until browned and bubbly, then serve warm to guests.
